Yes, it is a sign of purity: we use no emulsifier, so the oil rises over time. Do not pour it away — stir it back in with a clean, dry spoon. The nut's own oil is rich in monounsaturated fatty acids and is the most valuable part of the product; stirring restores the texture and lets you benefit from that oil in full.
